Healthy Peanut Butter Rice Krispies Treats
My husband is a funny guy. His random dry sense of humor has me laughing daily, usually at my expense! I recently made a comment to him about something I wanted him to change. Our husbands just love to hear all about what they need to change, right?!
I got sass in response, with him saying he’d get around to it over the next 10-15 years. Yeah, that’s not going to work for me. We aren’t getting any younger! So I responded with, “You’ll be dead by then!” To which he said, “Why? What are you planning?!” HA HA!! I think we’ve watched too many murder mysteries.

What You’ll Need:
- 1 cup Crunchy Peanut Butter
- 6 tbsp Honey
- 1/8 tsp Salt
- 3 cups Rice Krispies Cereal
- 1 1/2 cups Vegan Chocolate Chips
How to Make Peanut Butter Rice Krispies Treats
- Line muffin pan with liners and lightly spray with non-stick spray.
- Melt 1 cup crunchy peanut butter, 6 tbsp honey, and 1/8 tsp salt together on low heat until melted and well combined. Remove from heat.
- Stir in 3 cups Rice Krispies cereal. Mix well.
- Evenly distribute mixture into liners. Press down firmly.
- Melt 1 1/2 cups vegan chocolate chips over low heat. Stir constantly until melted. Remove from heat.
- Spoon melted chocolate over each treat, distributing smoothly and evenly.
- Put in the refrigerator until firm.

Recipe Notes:
- Peanut butter – You don’t have to use crunchy peanut butter, creamy works too!
- Vegan – If you’d like to make a vegan version, substitute the honey for agave.
- Chocolate chips – Regular chocolate chips will work instead of vegan chocolate chips.
- Filling the cups – Each cup will but just about to the top with the Rice Krispie mixture after pressing down firmly. You will have just enough room for a thin layer of chocolate. The chocolate will come right to the very top of the muffin liner.
- Squares – You don’t have to use a muffin tin. You can easily press the Rice Krispie mixture into the bottom of an 8 x 8 pan. Distribute the melted chocolate over it evenly.
- Freshness – It’s recommend that you store these in a sealed container in the refrigerator to keep them firm. I think they taste best that way, too!
- Freeze – You can also freeze these. Just store them in a freezer safe container.
