Old Fashioned Caramel Corn
A few people asked me if I took the day off to celebrate my birthday. But I LOVE my job way too much to take a day off, it makes me so very happy! Blogging on my birthday was a gift in itself! I doubt I will ever retire. Maybe slow down, but never truly retire. What I do and sharing recipes with you just brings me way too much joy and happiness to ever give it up!
Speaking of happiness, this Caramel Corn is great to have as a movie snack, to graze on over the holidays, or to give as gifts! It’s super easy to make and it’s crispy, not chewy. You could even stir in some peanuts if you are feeling adventurous!

What You’ll Need:
- 1 cup Brown Sugar
- 1/2 cup Butter
- 1/2 cup Light Corn Syrup
- 1/2 tsp Salt
- 1 tsp Vanilla
- 1/2 tsp Baking Soda
- 10 cups Popcorn (1/2 cup Kernels)
How to Make Caramel Corn
- Preheat oven to 250 degrees. Line a baking sheet with parchment paper and set aside.
- In a large sauce pan over medium heat, combine 1 cup brown sugar, 1/2 cup butter, 1/2 cup light corn syrup, 1/2 tsp salt, and 1 tsp vanilla and bring to a boil while stirring constantly.
- Then stir in 1/2 tsp baking soda.
- Spray a large bowl with non-stick spray and add in 10 cups popped popcorn. Pour the caramel mixture over the top and gently fold into the popcorn with a non-stick sprayed spoon until well covered.
- Pour the mixture on the prepared pan and bake for 60 minutes. Gently stir the mixture every 15 minutes. The popcorn should dry and darken.
- Let caramel corn cool.
