The Best Carmelitas
I miss movie nights with my sister. My memories go as far back as she & I biking to the grocery store to rent a VHS. We eventually upgraded to a car and VHS tapes evolved into DVD’s. She and I both loved romantic comedies, but the movies I picked out were never funny enough for her and the movies she picked out never had enough romance for me.
We’d always argue about which movie to watch, so every time we’d end up getting both. Then it was always, “Which movie are we going to watch first?”
My sister was hilarious, always at my expense. She’d watch a movie once and remember all of the one liners and use them on me! Most of the time I had no idea what she was talking about because I didn’t remember movie lines like she did. I wouldn’t get it, she’d have to explain, it would ruin the moment, and she’d make fun of me with another movie line. Sigh.
The Goonies was one of our favorite movies as kids. Just about every day she’d call for us in the voice of Sloth saying, “Hey… you guys!”
Movies have changed so much, they just don’t make them like they used to. I miss what they once were and I miss movie nights with my sister.
Since I can’t go back in time, I’ll enjoy the present with the Carmelitas. They are so easy to make with store-bought cookie dough, and they are dangerously addicting!

What You’ll Need:
- 1 (30 oz) roll Refrigerated Chocolate Chip Cookie Dough
- 1 (11 oz) bag Kraft Caramels, Unwrapped
- 1/4 cup Evaporated Milk
- 1 cup Milk Chocolate Chips
How to Make Carmelita Bars
- Preheat the oven to 350 degrees. Spray 9 x 13 pan with non-stick spray.
- Evenly press a little more than half of a 30 oz roll of chocolate chip cookie dough into the bottom of the pan.
- Bake for 20 minutes. Remove from oven and let cool slightly.
- While cooling, unwrap 1 (11 oz) bag of Kraft caramels, then place into a sauce pan with 1/4 cup of evaporated milk. Melt and mix together over low heat. Stir frequently.
- Once the cookie dough base is slightly cooled, pour 1 cup chocolate chips evenly over the cookie dough base. Then pour the melted caramel over the chocolate chips evenly.
- Crumble the remaining cookie dough over the top of the caramel. It doesn’t have to be perfect!
- Return the pan to the oven and bake for another 15-16 minutes, or just until starting to turn golden brown.
- Let cool before cutting and serving.

Easy Carmelita Bar Recipe
