Chex Scotcheroo Clusters
I have a love, hate relationship with our air conditioner. I didn’t grow up with air conditioning. We were acclimated to heat and it didn’t bother us as kids. If we wanted to cool off we’d ride our bikes to the icy stand and eat shaved ice! Or we’d play downstairs where it was cooler.
I don’t use the air in my car, unless it’s extremely hot. I just drive with my window down! And if it was up to me, I would only use the air in our house when it’s humid or unbearably hot. I love opening all the windows in my house and leaving them open until my husband starts to melt!
We have finally reached open window weather in central Wisconsin, so I am not about to turn the air conditioning on. Except, as I was taking pictures of these Chex Scotcheroos in the window I realized the sun was making the chocolate sweat! If you look close, you’ll notice it. Now my husband will try to convince me that if I won’t turn the air on for him, at least turn it on to save his treats!

What You’ll Need:
- 6 cups Rice Chex
- 1 cup Light Corn Syrup
- 1 cup Peanut Butter
- 1/2 cup Sugar
- 1 cup Milk Chocolate Chips
- 1 cup Butterscotch Chips

How to Make Chex Scotcheroos
- Pour 6 cups of Rice Chex cereal into a large bowl and set aside. Lay parchment paper out on the counter.
- Combine 1 cup light corn syrup, 1 cup peanut butter, and 1/2 cup white sugar into a sauce pan and mix together over low heat and stir until just warm, not hot.
- Pour mixture over cereal and mix to coat evenly.
- Using a cookie scoop, drop clusters of the mixture onto the prepared parchment paper.
- Allow clusters to cool.
- Melt 1 cup milk chocolate chips and 1 cup butterscotch chips in a sauce pan over low heat, stirring frequently until melted and smooth.
- Spoon mixture over clusters and divide evenly until the chocolate mixture is used up.
- Allow to cool until firm.
Pro Tip: When you heat the corn syrup, peanut butter, and sugar together just heat it until warm, it doesn’t need to be hot. It only needs to be warm enough to mix together until smooth.
