Healthy Energy Balls
Our church is great about scheduling social events. They have regular Pickleball game nights and we just love going! We get to spend time with friends, share snacks, and have fun while getting in some exercise! I recently made a double batch of these Chia Seed Energy Balls to share with everyone at one of the games, but I should have waited until the last minute to make them because they are so addicting!
They sat on my counter and tempted me for two days! It is just way to easy to eat too many of these, I just can’t stop eating them! The peanut butter pairs so perfectly with all of the ingredients, they are just so irresistible and too good not to share with you!
This is originally a no bake recipe, but I like to bake them. Just trust me! If you like these, then you will like No Bake Chocolate Peanut Butter Oat Bars, Crispy No Bake Peanut Butter Energy Bites, and No Bake Peanut Butter Oat Bars, too!
What You’ll Need:
- 2 cups Quick Oats
- 1 cup Shredded Coconut
- 3/4 cup Chia Seeds
- 1 cup Chocolate Chips
- 1/2 cup Honey
- 3/4 cup Peanut Butter
- 1/2 tsp Vanilla
How to Make Chia Seed Energy Balls
- Preheat oven to 350 degrees. Line baking sheet with parchment paper and set aside.
- Combine 2 cups quick oats, 1 cup shredded coconut, 3/4 cup chia seeds, 1 cup chocolate chips, 1/2 cup honey, 3/4 cup peanut butter, and 1/2 tsp vanilla and mix together well.
- Scoop and roll into 2 tbsp size balls and place onto prepared baking sheet.
- Bake for 6 minutes, then rotate pan. Bake for additional 6 minutes and remove from the oven.
- Allow them to completely cool before removing from the pan and storing.
Recipe Notes:
- No bake – You don’t have to bake these, but they hold up a lot better if you do! If you are looking for no bake, I would make these Crispy No Bake Peanut Butter Energy Bites instead. They are fantastic, too!
