Peanut Butter Pretzel Bites
I am always paranoid that I don’t give enough specific direction in my recipes. I prefer to work from a recipe that is short and sweet. I feel overwhelmed if there’s fluff.
For example, if I say ‘microwave chocolate,’ I am assuming the reader knows they need a microwave safe bowl to melt the chocolate in. Leaving out the stuff that is safe to assume the reader knows shortens the recipe. And a shorter recipe feels doable!
I love easy recipes that pack a ‘wow’ factor! These Chocolate Peanut Butter Pretzel Bites are one of my favorites. So are 3-Ingredient Twix Bites, 2-Ingredient Peanut Butter Cup Cookies, and Monster Cookie Energy Balls!
What You’ll Need:
- 1 cup Peanut Butter, Creamy
- 2 tbsp Butter, Melted
- 1/2 cup Powdered Sugar
- 3/4 cup Brown Sugar
- 2 cups Chocolate Chips, Melted
- Mini-Twist Pretzels
How to Make Chocolate Peanut Butter Pretzel Bites
- Lay pretzels out on a parchment paper lined baking sheet.
- Beat 1 cup peanut butter and 2 tbsp melted butter together until well combined.
- Then add 1/2 cup powdered sugar and 3/4 cup brown sugar to the peanut butter mixture. Mix well.
- Roll the mixture into 1 tsp size balls and place on the pretzels. Press additional pretzels onto the peanut butter balls and lightly press down on each one, sandwiching the mixture.
- Melt 2 cups chocolate chips in the microwave in 30 second intervals, removing from the microwave and stirring between each 30 seconds until the chocolate is melted and smooth. Dip each pretzel bite halfway into the melted chocolate and place onto lined baking sheet.
- Chill in the refrigerator until the chocolate is firm.
Recipe Notes:
- Peanut butter mixture – The peanut butter mixture needs to be firm before you place it on your pretzels. Not hard, but firm. If the mixture is sticking to your hands as you roll it, it’s not firm enough and will require additional powdered sugar. This will firm up the mixture. Add in additional powdered sugar until the consistency is firm, about 1/4 cup at a time. Mix between adding in additional powdered sugar.
- Freeze – The taste great frozen! Store them in a freezer safe bag.
- Vegan – You can easily make these vegan by swapping the chocolate and butter for vegan options.
