Pillsbury Cinnamon Roll Apple Pie
This Cinnamon Roll Apple Pie is pretty comparable to my life. I tried to scoop the pieces of pie out in a way that you could see the crust in the pictures. Scoop after scoop I was failing at perfection. I was down to two pieces and finally got one out that wasn’t oozing so much over the crust that you couldn’t see it.
But still, as I tried to push the ooze around to make way for the camera to see enough of the crust it still just kept pouring out. I stood back and thought, ice cream will fix this. It wasn’t enough, so I brought in the big guns – Ghirardelli caramel sauce. Which by the way, is the best caramel sauce ever.
Much like my life, I try to do my best. Either I don’t feel like it’s good enough, or as I am ‘fixing’ myself I just expose a whole bunch of other things that need ‘fixing,’ too. To matters worse, I fix everything with ice cream!
Sigh. I am, and always will be, a recovering perfectionist and work in progress. Forever.

What You’ll Need:
- 1 (12.4 oz) roll Pillsbury Cinnamon Rolls
- 1 Egg White, Whipped
- 1 (21 oz) can Apple Pie Filling
- 2 tbsp Sugar
- 1 tsp + 1/2 tsp Cinnamon
- 6 tbsp Butter, Softened
- 3/4 cup Flour
- 3/4 cup Brown Sugar
- 3/4 cup Pecans, Chopped
- Vanilla Ice Cream, Optional
- Ghirardelli Caramel Sauce, Optional

How to Make Cinnamon Roll Apple Pie
- Preheat oven to 375 degrees. Spray a 10″ pie pan with non-stick spray.
- Flatten 8 cinnamon rolls from 1 (12.4 oz) roll Pillsbury Cinnamon Rolls into the bottom of the prepared pan.
- Brush the cinnamon rolls with 1 whipped egg white.
- In a small bowl, whisk together 2 tbsp sugar and 1/2 tsp cinnamon. Sprinkle evenly over the cinnamon rolls.
- Bake for 10 minutes.
- Remove from oven and spread 1 (21 oz) can apple pie filling over the baked cinnamon rolls.
- In a small bowl, combine 6 tbsp softened butter, 3/4 cup flour, 3/4 cup brown sugar, and 1 tsp cinnamon with the back of a fork to make the crumble.
- Sprinkle evenly over the apple pie filling. Then sprinkle 3/4 cup chopped pecans over the crumble.
- Bake for 25-30 minutes.
- Optional: Top with icing that came with the cinnamon rolls or vanilla ice cream with caramel sauce.
