Easter Crack with Saltine Crackers
Quite often I start my retired parents day by asking, “Are you bored?” They know that question means I have some ridiculous time consuming errand I need them to run! HA!
Time is always of the essence for me. I already run more errands than the average person, so to add any more really sets me back some days. Especially when it takes multiple shot in the dark stops to find something as simple as sprinkles! I suppose if I wasn’t so picky about what I need it wouldn’t be so complicated!
I greatly appreciate my parents for spending so much time running around to find just the right thing!

What You’ll Need:
- 40 Saltine Crackers
- 1 cup Salted Butter
- 1 cup Brown Sugar
- 2 1/4 cups White Chocolate Chips
- Red Food Coloring
- Easter Sprinkles

How to Make Easter Crack
- Preheat oven to 400 degrees.
- Line a 10 x 15 baking sheet with aluminum foil and spray with non-stick spray.
- Place 40 crackers in a single layer on the baking sheet.
- Combine 1 cup butter and 1 cup brown sugar in a saucepan, stirring frequently, and bring to a boil. Keep stirring continuously for 5 minutes after boil is reached.
- Pour the mixture over the crackers and spread evenly.
- Place the pan in the oven and bake for 5 minutes.
- Remove from the oven and let sit until the crackers settle, just a minute or two. Using a butter knife, push any crackers that are overlapping back into place.
- Immediately melt 1 1/2 cups white chocolate chips in the microwave in 30 second intervals, stirring between each interval, until smooth and melted.
- Place dollops of the melted chocolate over the toffee layer.
- Then melt remaining white chocolate chips in the microwave in 30 second intervals, stirring between each interval, until smooth and melted. Add in 1-2 drops of red food coloring to make light pink.
- Place dollops of the melted pink chocolate over the toffee layer. Spread and swirl until covered.
- Sprinkle Easter sprinkles on top and let toffee sit until cool.
- Cut or break into pieces to serve.
