A sweet saucy filling packed into a buttery, flaky pie crust and topped with ice cream is sure to be a family favorite!
Simple Rhubarb Pie
My heart hangs on my sleeve, so I randomly get emotional about things that wouldn’t make a normal person cry. One Sunday, when my son was little, I was in the kitchen making Strawberry Rhubarb Overnight Oats and my husband and son were downstairs.
When I went downstairs I found them building with Lincoln Logs and playing with cars. I stopped in my tracks, my husband and I made eye contact, and my eyes started welling up with tears. The shocked look on my son’s face from my random tears was enough to make me laugh myself out of sobbing! I told my husband that he is a good Dad, he smiled, and I went on my way.

Recipe Notes:
- Boiling Over – To avoid a mess if the pie runs over in the oven, put a large piece of foil (shiny side up) under the pie.
- Even Cooling – Place the pie on a cookie rack after removing from the oven to allow even cooling.
- Crisco – If you’d prefer, you can substitute the Crisco with butter.
- Serving – Allow the pie to completely cool before cutting and serving. This gives it time to set.
