This month I am keeping it easy because Spring is a busy time and healthy because well, let’s face it… swim suit season is coming. We shouldn’t have to give up the things we love just to look good on the beach, so let’s just make a few tweaks to our favorites!
How to Join Jamie’s Baking Challenge
- A new baking challenge is published on the 1st of every month. Make sure to sign up for my emails to receive each new baking challenge!
- Bake that recipe during that month.
- Share your recipe photo by emailing it to me at [email protected]. By emailing your picture to me, you are automatically entered into the baking challenge.

What You Need to Make a Healthy Chocolate Mug Brownie
- Cocoa Powder
- Flour
- Sugar
- Baking Powder
- Salt
- Unsweetened Applesauce
- Vanilla or Chocolate Almond Milk
- Vanilla Extract
- Mini Vegan Chocolate Chips
How to Make a Healthy Chocolate Mug Brownie
- Combine 2 tbsp + 2 tsp cocoa powder, 3 tbsp flour, 2 tbsp sugar, 1/4 tsp baking powder, 1/8 tsp salt, 1 tbsp unsweetened applesauce, 1 tbsp mini vegan chocolate chips, 3 tbsp unsweetened vanilla or chocolate almond milk, and 1/2 tsp vanilla extract into a mug and whisk together.
- Once well mixed, sprinkle additional chocolate chips on top of the batter if desired then place into the microwave for 1 minute. Check on the brownie, it may need an additional 10 seconds because microwaves vary.
- Top with vegan whip cream or ice cream if desired.

Ingredients
- 2 tbsp + 2 tsp Cocoa Powder
- 3 tbsp Flour
- 2 tbsp Sugar
