I am not sure what is going on with me lately, but I am an emotional basket case. Normally I would blame shark week (my uninvited monthly visitor) but even without it I am a hot mess. I’ve been this way for a while and I wish it would stop.
Here’s the scoop… I keep getting emotional about my son growing up. He’s just doing what he’s supposed to, I just feel like it’s happening too fast. It seems like everything around me triggers a sensitivity to the years passing by so quickly. It’s gotten a little ridiculous! I give myself a pep talk when this happens, but it’s short lived. I pull myself together in that moment and move on, but then it just happens again. And again.
I love kids! I would have a whole tribe of them if I could, but I can’t.
My sister died during the childbirth of her second child when she was 28 years old. At the time my nephew was 3 years old and our son was 2 years old. We were planning to have a second child, but my husband was terrified to his core that something would happen to me if we had another child. So we agreed not to have another child. I decided I would share my love with the other children in my life, so that is exactly what I do!
Time will always pass quickly, there isn’t a thing I can do about that. I just need to figure out a way to accept that fact! Any advice from seasoned Mother’s would be greatly appreciated!
What You Need to Make Homemade Pizza Pockets
- Pillsbury Pizza Crust
- Pizza Sauce
- Mozzarella Cheese
- Cheddar Cheese
- Oil
- Oregano
How to Make Homemade Pizza Pockets
- Preheat the oven to 425 degrees.
- Open the tube of Pillsbury Pizza Crust and unroll it flat onto a sheet of parchment paper lined baking sheet. Using a pizza cutter, cut the dough into 6 pieces.
- Separate the 6 pieces and gently stretch them out a little.
- Add about 1 tbsp of pizza sauce, a pinch of mozzarella cheese, and a pinch of cheddar cheese to the corner half of each square.
- Fold over each square to make triangular pizza pockets. Seal the edges with a fork.
- Brush the top of each triangle with a small amount of oil. Sprinkle some dried oregano on top then sprinkle with mozzarella cheese.
- Bake for 10 minutes.
Tips for Making and Serving Homemade Pizza Pockets
- You don’t have to use pizza sauce, any pasta sauce will work.
- I haven’t tried homemade pizza dough, but I am sure it would work just the same!
- Don’t overfill the Pizza Pockets, you will have a mess! You can dunk in additional pizza sauce after they are baked.
- Make sure not to fill right up to the edge of the dough – save room to seal them with a fork.
- You can add any additional filling that you would like – veggies, vegetarian meat, etc.!
