Mini Gingerbread Cheesecakes
One of my very favorite sounds is hearing the snowplow go through during an early winter morning. I love getting a heavy snowfall that covers everything with glistening bright snow! But I especially love that the snowplow means we might have a snow day and school is cancelled! I always check right away, crossing my fingers that we’ll be snowed in. I love snow days!

What You’ll Need for the Crust:
- 1 1/2 cups Graham Cracker Crumbs
- 4-5 tbsp Butter, Melted
And the Cheesecake:
- 2 (8 oz) Cream Cheese, Softened
- 3 tbsp Flour
- 1/2 cup Brown Sugar
- 1/8 tsp Cinnamon
- 1/8 tsp Ground Ginger
- Pinch of Nutmeg
- 2 tsp Vanilla
- 1/2 cup Sour Cream
- 2 tbsp Molasses
- 2 Eggs
- Whipped Cream
How to Make Mini Gingerbread Cheesecakes
- Preheat oven to 350 degrees. Line a muffin pan with liners.
- Turn about 12 graham crackers into 1 1/2 cups crumbs in a food processor. Pulse in 4-5 tbsp melted butter to form the crust.
- Spoon 1 heaping tablespoon of the crust mixture into the liners and press down firmly with the back of a spoon.
- In a mixing bowl, beat together 2 (8 oz) softened cream cheese, 4 tbsp flour, 1/2 cup brown sugar, 1/8 tbsp cinnamon, 1/8 tsp ground ginger, a pinch of nutmeg, and 2 tsp vanilla until smooth and creamy.
- Beat in 1/2 cup sour cream and 2 tbsp molasses until well combined. Then beat in 2 eggs until smooth.
- Spoon 1/4 cup of mixture into each cup, filling them almost full.
- Bake for 15-18 minutes. The centers of the cheesecakes should be slightly jiggly.
- Top with whipped cream.
