Healthy No Bake Peanut Butter Oat Bars
Do you ever stare at your closet waiting for an outfit to jump out at you? I do. My husband calls it the closet stare. I will just stand there and stare… and stare some more… I want to be comfortable and I want to feel good in what I am wearing! It takes deliberation to reach a decision!
And… I do the same thing with my kitchen cabinets. I plan our meals to avoid the stare down… but sometimes I just don’t feel like making what I had planned. So I’ll look in the kitchen cabinets, refrigerator, or freezer just hoping something will jump out at me!
These No Bake Peanut Butter Oat Bars should help avoid a stare down when you need a healthy snack or something different for packed lunches. You only need a few basic ingredients, all of which I am confident you already have to keep this easy!

What You’ll Need:
- 2 cups Peanut Butter
- 1 cup Honey
- 3 cups Old Fashioned Oats
- 1 tsp Vanilla
- 1/4 cup Vegan Mini-Chocolate Chips
How to Make No Bake Peanut Butter Oat Bars
- Line a 8 x 8 pan with parchment paper. Set aside.
- In a medium sauce pan, stir together 2 cups peanut butter, 1 cup honey, and 1 tsp vanilla until melted.
- Remove from heat and mix in 3 cups old fashioned oats until well combined.
- Pour into prepared pan and spread evenly. Sprinkle 1/4 vegan mini-chocolate chips on top.
- Place in refrigerator until firm. Once firm, cut into bars.

Recipe Notes:
- Size – You can make these any size you’d like, just change the pan size to 9 x 13 or 9 x 9! You can even cut them into No Bake Peanut Butter Oat Bites!
- Peanut Butter – If you want a little crunch, just use crunchy peanut butter instead of creamy.
- Vegan – You don’t have to use vegan mini-chocolate chips, regular work just the same!
- Storing – These bars should be kept covered in the refrigerator. They are easiest to hold and eat when they are firm. When they are left out of the refrigerator, they get soft quickly. A thicker bar holds together better.
