How to Make Rolo Brookies with Brownie Mix and Cookie Dough
AI is a tool and just like all tools, it can be used for good or bad. The company that runs ads on my blog took a very firm stand against the overuse of AI and terminated relationships with any bloggers using it to take away from the real people behind legitimate blogs.
Just like nails can be used to build a house, they can also poke holes in a raft and sink it. Tools have to be used responsibly. AI can literally do all the work for a blogger, from writing the content to producing the pictures all with the click of a few buttons or voice commands. Thankfully, AI generated images look too perfect and words in the blog post read like a encyclopedia so they stand out like runway lights!
I urge you to stay away from recipes that are not shared by real people. The pictures should look realistic and the content shouldn’t be perfect! Cheers to finally having a solid reason to embrace imperfections!
Although, I do have to say these Brookie Cups are near perfection! Especially when they are warm and ooey-gooey! My Mom spent a lot of time crafting this recipe for you with a lot of trial and error! She actually stuffed some of the ones you see in the pictures with mini-Snickers, so you can get creative with the candy bars you use!

What You’ll Need:
- 1 box Pillsbury Milk Chocolate Brownie Mix + Ingredients on the Box
- 1 (24 count) package Chocolate Chip Cookie Dough Squares
- 48 Rolo’s, Unwrapped
How to Make Rolo Brookie Cups
- Preheat oven to 350 degrees. Spray muffin tin with non-stick spray and set aside.
- Make 1 box Pillsbury milk chocolate brownie batter according to the directions on the box.
- Cut 48 unwrapped Rolo’s in half.
- Place 1 chocolate chip cookie dough square in the bottom of each muffin cup and press down evenly.
- Set 4 Rolo halves on top of the cookie dough with the caramel side up.
- Scoop brownie mix on top of the Rolo/cookie dough, evenly dividing between 24 muffin cups. I recommend using a 1 1/2 tbsp cookie scoop.
- Bake for 20-22 minutes. Place a toothpick in the center of the brownie, avoiding the Rolo, and when it comes out clean they are done.
- Set on rack to cool for 5 minutes. Then loosen edges with a knife and transfer to a cooling rack.
