Original Scotcheroo’s Recipe
When my son was a toddler he loved to climb up on the counter top and bake with me. But then he outgrew being able to sit up there and lost interest in baking with me. However, over the past couple of months he has shown interest in baking – just not with me!
A few weeks ago I gave him the go ahead to bake by himself, but it was a disaster. He picked a recipe that was too complicated for someone without experience. I knew that, and I recommended against it, but he insisted on giving it a try. It was a complete fail and he was upset. The kitchen was a disaster and he wanted to give up.
I wouldn’t let him give up, so I baked the same recipe along side him so he knew where he went wrong. I wanted him to embrace his mistakes and learn from them! Just because it didn’t go like he expected it to doesn’t mean he can just give up. That is part of the joy of baking!
Some time passed and he wanted to try baking again. This time he chose a cheesecake that looked like it was going to take us all day. And sure enough it did… we were still working on it the next day, too! This masterpiece required a bazillion ingredients, a water bath, two different cooling times… it was exhausting. But, it finally sunk in. He finally realized that he can’t just pick recipes based on the picture. Again, a learning experience.
So I am sending him to my school of baking. It’s really not a thing, I just made it up, ha! I told him I would like him to spend his summer experimenting with the basics. It’s going to be like a science class, but with baking. I want him to bake brownies from a box in several different size pans, I want him to make Rice Krispies Treats and convert different size marshmallows, and see what happens when he makes pudding with different kinds of milk.

What You’ll Need:
- 1 cup Sugar
- 1 1/3 cup Light Corn Syrup
- 1 1/3 cup Peanut Butter
- 1 tsp Vanilla
- 6 cups Rice Krispies
- 1 cup Chocolate Chips
- 1 cup Butterscotch Chips
How to Make the Best Scotcheroos
- Spray 9 x 13 pan with non-stick spray and set aside.
- Pour 6 cups Rice Krispies into a large bowl and set aside.
- In a medium size sauce pan, add 1 cup sugar and 1 1/3 cup light corn syrup and mix together.
- Place pan on stove top over low heat and stir until just warm, not hot.
- Remove from the heat and stir in 1 1/3 cup peanut butter and 1 tsp vanilla.
- Pour mixture over Rice Krispies and mix well.
- Pour into prepared pan, distribute evenly, and press down firmly.
- Combine 1 cup chocolate chips and 1 cup butterscotch chips in a microwave safe bowl and microwave in 30 second intervals, stirring between intervals, until smooth and melted.
- Pour over pan of Rice Krispies and spread evenly until covered.
- Let chocolate harden before cutting.
Pro Tip: When you heat the corn syrup and sugar together just heat it until warm, it doesn’t need to be hot. It only needs to be warm enough to mix together until smooth and melt the peanut butter when you stir it in.

To keep them soft, only keep it over low heat for a few minutes. The pan should be warm to the touch. If you can’t touch it, it’s too hot!
